Tucker's Natural Oat Crackers & Squash Dip


9 oz squash – peeled, deseeded and cut into 1 inch blocks
4 cloves garlic – leave skin on
1 oz smoked almonds
½ cup olive oil
¼ tsp salt flakes

Prune & Walnut Stuffing


2 oz butter
1 onion, finely chopped
½ cup celery, finely chopped
9 oz Prune and Walnut Log, roughly chopped
2 cups fresh breadcrumbs
1 tablespoon chopped parsley
1 teaspoon fresh thyme
grated zest of orange
salt and freshly ground pepper

Making a Cheese Plate

Theme
A theme will make it easier to choose from the huge range of
cheese available. Country, texture, producer or milk-type
are common themes. For milktype you would select cheeses
made from cow, sheep and goat’s milk. 3 to 5 cheeses are
usually sufficient.

Yellingbo Gold Glazed Butternut Pumpkin


1 Medium butternut pumpkin (Squash)
2 cups plain yoghurt
1/2 cup yellingbo olive oil
1 tablespoon honey
1/2 teaspoon cinnamon
Pinch of nutmeg
1/2 teaspoon Murray river salt flakes
1/2 teaspoon fresh ground black pepper

Brookfarm Macadamia Nut Chocolate Cake with Chocolate Glace


Ingredients – Brookfarm Macadamia Nut Chocolate Cake
10 oz. Brookfarm Macadamia Nuts
16 oz. semi-sweet dark chocolate
1 tablespoon instant coffee
2 tablespoons hot water
8 eggs - separated
20 oz. unsalted butter
6 oz. corn flour
8 oz. caster sugar

Ingredients – Chocolate Glace
1 oz. instant coffee
12 oz. chocolate
1 cup hot water

Vietnamese Chicken (or shrimp) Salad


3 Chicken Breasts
½ cup rice vinegar
½ teaspoon salt
½ teaspoon freshly ground black pepper
3 tablespoons raw sugar
1 red onion finely sliced
250gm Chinese cabbage finely sliced
1 large carrot, peeled and grated into very fine shreds
2 tablespoons Lemon Myrtle Infused Macadamia Oil

Garnish
1 tablespoon chopped Vietnamese hot mint
(if not available use ½ tablespoon mint and ½ tablespoon rocket chopped to
thin strips)
2 tablespoons raw macadamia pieces
1 tablespoon natural macadamia oil
1 tablespoon crisp fried shallots (buy in Asian Grocery stores)
Prawn Crackers

Dipping Sauce

½ teaspoon raw sugar
3 tablespoons fish sauce
1 tablespoon fresh lime juice
1 fresh red chilli (seeded and sliced finely)
